I have heard this too.  However, I think that they are
only refering to birds that have been stuffed in
advance.  If you stuff a bird the day before you cook
it, or even longer, there is the _potential_ for
breeding bacteria.  But if you stuff the bird and then
cook it immediately at a sufficiently high
temperature, then there is less _potential_ for
breeding bacteria.

As for drying out the bird, I have not heard of that
before.  From experience, I have noticed the opposite;
that a stuffed bird is moister than an unstuffed bird.
Of course, that is what basting is also for.
