The thanks for the research all belongs to Melanie Wilson and Thomas who 
kindly forwarded me the exact references. Although my library is very well 
supplied with copies of period cookery manuals, it is extremely deficient in 
primary source material for agricultural techniques and animal husbandry 
(although secondary and tertiary sources abound).
