SV: SC - Dressing/stuffing OOP

Hmm...I've never given this much thought, mostly because I use 
a stuffing of minced pork which needs to be cooked through  thus eliminating
the bacteria problem.
I also make my bread crumbs from fresh bread so i don't worry too much about
bacteria.
What about rubbing the insides with a halved lime/lemon/washing with
lime/lemon juice?
I'm not quite sure if the low pH will kill the bacteria or if it's just a
taste thing...
Just bread as stuffing sounds like it'll dry it out something horribly.
