(trying my best Horseshack imitation)
My landlady used to make fruit compote. She didn't have a recipe, but she 
used only red fruit and she used sugar and rum. She would take the cut up 
fruit (about 2 cups) and put it in a bowl. She then sprinkled about 1/4 cup 
of sugar and maybe 1/4 cup of rum on the fruit. Every couple days she added 
more fruit and more sugar, can't remember isfshe added more rum or not. If I 
remember correctly, after 9 days they started eating it. Everytime the took 
out fruit they replaced it with more fruit sugar and rum. She said you could 
keep it up indefinitely. This is very good served over vanilla ice cream.
