Greetings! While doing more research for the Cooking Symposium confection class
I will be teaching in January I became side-tracked by "banquets", the dessert
course during Tudor/Elizabethan/Stuart times, also known as "voidee" in France.
I decided I wanted to find a recipe for each of the items listed in the banquet
course as described by several authors. (Got 'em!) Now, all that is needed is
someone who would be interested in mastering the making of these confections,
who would have an interest in re-creating a typical banquet. I know some of you
folk have done it on a certain scale, but I've come to believe that some of the
banquet items need more skill than what some of us bring. I guess I'm wondering
if there is anyone out there who needs/wants a nudge to the years-long project of
learning sugar work. It sure would be nice to see some re-creations of the fancy
work.
