I simply put the cover on the roaster and leave it over night in a 225 deg F 
oven with a few cups of liquid of your choice (e.g. water). A half hour or so 
before serving remove the cover and let the bird brown. Probably the best one 
I ever did was roasted with strips of fresh bacon (e.g. side pork not smoked 
or cured in any way). The gravy was to die for. :-) I have never had a turkey 
that comes out dry with these methods.
