SC - Sumac

Well, since my master has not yet surfaced from the depths of the great
inter-apartment move, I guess I need one of those infamous :"try the
Florilegium files under ....."  I would like to try the Maqluba recipe from
al-Baghdadi.  In His Grace's comments on the recipe he recommends getting
sumac from an Iranian market.  Not a real big Middle Eastern population in
my neck of the woods.  Is there someplace I can get this on the web?  Are
there acceptable substitutes?  What does Sumac do for this dish?  I looked
through the Florilegium but without success.  That only tells me I was
looking in the wrong place.  I vaguely seem to remember a discussion about
sumac a few months ago, but have nothing on it in my archives either.  Any
help would be greatly appreciated.
