I had the pleasure of helping cook the Yule Feast of a neighboring barony last
December.  We had found a source of fairly flat (tho leavened) bread, which we
cut once vertically and once horizontally to make four trenchers a loaf.

This was extremely well received and most of the trenchers were eaten, 'cause
it was very good bread to start with and it just got better with each course.
