Galingale (I haven't tasted it yet, but I'm expecting some in the mail :) is supposed to taste like a sharp combination of Pepper and Ginger. We'll see. I found a wonderful online spicer that carries all sorts of rare spices. grains of paradise, galingale, hyssop, cubeb, sumac, and so forth...
