Simply gather the seed of queen Ann's Lace. Dig up the roots. Replant the
largest roots and repeat the process for three years. in the third year you
will have a carrot that is to all intent and purposes equivalent to medieval
carrots. the outer layer is relatively thivk and only the hard core need be
removed. the flavor is somewhat stronger than modern varieties but is in no
way inferior. For those who don't wish to take that route there are both white
and red varieties of carrot listed in any seed catalogue woth it's salt. the
color will be accurate but the flavor rather mild.
