Hi lachlan, 
No, modern carrots aren't period, but that often doesn't stop folks from
using them.  The original carrots were red or white, skinny, and didn't
taste as good as modern ones do.  A parsnip tart would be close, and if
you use the carrot pie, explain that you now know the carrots wouldn't be
used in this way, it is a 'peri-oide' recipe.
They are cheap, they are good, people will eat them, and we don't have
the original carrots--not even in your uncle's garden!  BTW, the last of
the herbs except a big pot of thyme, and one sorrel plant have all died. 
You'll need to re-stock me next Pennsic!  Sure was fun while it lasted...
