Whatever configuration you, be sure there is enough space between the tables
to let the servers move without tripping over trains and hoop skirts.

An 8 foot table can take 4 to a side.  A 6 foot table can seat 3 to a side
and 1 at each end.

Measure the area you are going to use.  Check the size of you tables.
Layout the tables so that people can see what is happening and so there is a
traffic pattern out to the tables for serving and back to the kitchen to
keep an orderly flow for the servers.
