There are, however, both archeological and text references to a system of ice
houses maintained in the Middle East during period (See 'Food in History'). 

Through much trial and error and based on the experience of others this is the
closest I could come to a recipe which provuded consistent results. The manner
of production is not in any way period or period like although the resulting
end product is very sililar to the type of product kept in ice houses. I would
assume that a product which resembled the period version of 'Ice' would most
likely be collected from ponds and lakes of mountainous regions where ideal
temperatures manifest themselves. 

IMO, this recipe produces an acceptable substitute for the real thing..Other
opinions may or may not concur. Suitable wild ice substitutes can also be
obtained from most markets if you do not have the facilities or expertise to
try your hand at creating your own. Once obtained and stored properly these
substitues can be used to produce passible period-like sorbits and Italian
ices.
