Roe from any fish can be used but I am fond of that found in bullheads,
catfish a,d crappies or sunfish. Be very careful not to break the sacks that
hold the roe together. Soak them in salt water for a couple of hours to
remove some of the fishy taste associated with not a few fresh water fish. Dip
in flour then in egg and then in flour or cracker meal sesoned with a little
salt and pepper. Fry until golden brown in lard or butter just as you would
southern fried chicken. Yum! :-)
You can crumble the leftovers if there are any into scrambled eggs for another
taste treat.
