The "Libro del Arte de Cozina" (Spanish, 1599) has a few recipes
for New World creatures -- if I'm interpreting the terms correctly.
gallo/gallina de las Indias -- (literally, rooster/hen of the Indies)
Probably turkey.
conejo de las Indias -- (literally, rabbit of the Indies)
Probably guinea-pig. The modern term is conejillo de las Indias,
(lit., little rabbit of the Indies)
There are no New World animals in the other late-period Spanish
cookbook I am familiar with -- the 1529 edition of the "Libro de
Guisados".
