Harold McGee gives no date for a first recorded use or anything like
that. Maybe someone with an OED could see about the first known use of
the term... .

A couple of the late or post-period sources seem to suggest that some
common functions for cream of tartar (i.e. use in egg-white foams and
various sugar-working processes) should not be pursued if there's any
hint of humidity in the air, which _might_ indicate this helpful tool
was unknown.
