	Folks have been mentioning the spice galingale on the list and I've
seen it in some books. Just what is it and where would I find it? Thank you.

Galingale is also known as galangal, and is commonly found in Thai and
usually Chinese food stores, where it is a staple spice. You shouldn't have
too much difficulty finding it there. Dried, it looks (and tastes) similar
to sliced dried ginger, but has a milder, slightly peppery and sometimes
sweeter taste (as aforementioned by Mor Dhana). I prefer it to ginger
myself.
