Pease pudding is made from peas tied up in a cloth, and boiled like a
dumpling with something like a chunk of ham or bacon. It becomes a firm
cake that can be sliced and served alongside slices of the ham or
bacon... . Probably eighteenth-century English. Some versions call for
the peas to be semi-cooked before tying up in the cloth.
