4 boneless, skinless walleye fillets (preferably 15-18 inch fish)
2 TBSP butter
Mrs. Dash or homemade herbal blend (dill & marjoram work real well)
sliced cheddar cheese
sliced Swiss cheese
1/2 c. chopped mushrooms
2 TBSP minced onion


Place fillets, former skin side down, in center of heavy-duty foil sheet,
arranging them lengthwise alternating head & tail sections.  Dot butter on
fillets & sprinkle generously with herb seasoning.  Place sliced cheese on
fillets, alternating cheddar & Swiss, covering all the fish (overlap or add
extra if necessary).  Scatter mushrooms & onions on top of cheese.  Seal
fillets into foil packet.  Bake at 400 degrees for 15 minutes (longer if
fillets are very large).
