Anyone have a good period reference for this?

I followed the recipe that I found in a christmas present (an Italian bread book) and what happened was
wonderful.  I have never cooked a bread pudding recipe where you let the bread/milk/sugar/butter rest together
for the better part of a day, but the mixture puffed 2" above the pan lip and settled back to a wonderful
pudding.  I was just wondering what this resting caused in the bread to make it poof???  Most of the bread
pudding I have ever attempted before was dull and dense.
