SC - cooking classes on period foods

Bear-
    I would love to have everyone come.  Even Non-SCA people interested in "real
period" cooking.   I really want to get my wedding coordinator/feastocrate to
come.  If she can't come to DFW (from Monroe, La)  I would like to get
everyone's permission to tape it for a one time, private use.  (my wedding)  I
plan to show her my notes, but I am sure I could not take notes fast enough to
get everything.  I will try to get a location as soon as they give me a date!!!
(the sooner the better my wedding is coming soon!!!)
