It sounds like these roots are smaller than the ones I've seen, which I
remember as being maybe a foot long by 1 inch at the thickest point.
Maybe we've been using the two different species of root? (Some of the
botanical details have escaped me, I'm afraid.)

Regardless of size, I'd figure on losing 1/3 to peels and trimmed ends,
giving an 11-lb case roughly, what, 7 1/2 pounds edible root, which I
figure would serve an average crowd of maybe 40 mixed enthusiastic and
detesting diners, since some might eat 1/2 pound and others might eat none.

How does that logic sound to you, Ras? You've served the stuff more
recently than I have.
