Hi there

I am weeks behind on this list (it happens when you get sick then talke
holidays). Brenna, I don't know if you ended up getting a Stifatho recipie,
but here is the one I had for you... It's from "Cooking the Greek Way" by
Anne Theoharous which is still my favourite Greek cookbook (ISBN vanished
with title page).

Stifatho - serves 4-6, takes 3 hours.

100 g (3.5 oz) butter
1 Tbsp olive oil
1 large onion, chopped
2 cloves garlic, chopped fine
700 g (1.5 lb) lean stewing beef, cut in 2 cm (1") cubes
2 Tbsp tomato paste
1.5 cups dry red wine
1 tbsp wine vinegar
water
1 bay leaf
Pinch cummin, cinnamon
1.5 tsp salt
1/4 stp fresh pepper
700 g (1.5 lb) small white onions
Boiling water

Heat the olive oil and half the butter over medium heat. Add the onions,
garlic, meat and stir until the meat is browned. Add tomato paste and stir
to coat. Add wine and enough water to barely cover the meat. Add the
vinegar, spices and seasonings, mix through. Cover and reduce to a simmer
for 2 hours.
Pour boiling water over the onions then sit for a minute or so. Slip off the
skins, then boil in lightly salted water 3 mins. Drain, rinse with cold
water and drain again. Brown them in the remaining butter in a clean pan.
Once the meat is tender, add the onions. Simmer until tender (about 30 mins).
Good with rice or mash.
