I'm not sure about the salt since I tend to use sea salt in everything I cook
but if the folks from 'somewhere were having problems with dishes being 'too
spicy' , I would suggest they weren't redacting the recipes correctly or,
alternatively, they probably would find Indian, Middle Eastern and Spanish
food too 'spicy' fior modern tastes. I suspect that the real reason the
recipes they used tasted badly, if such were the case, it was because of
inexperienced people preparing them incorrectly.
