For already reconstructed recipes, check out the following books:
"Great Cooks and their Recipes" by C Ann Willan
" THe Medieval Cookbook" by Maggie Black
"Medieval Miscellany" by Cariadoc and Elizabeth
"Savoring the Past" by Barbara Wheaton
"Pleyn Delite" by Constance Hieatt
"Early French Cookery" by Terance Scully

For primary sources check out the following:
Chiquart (translation by Scully)
le Menagier (various translations available)
Taillevent's viandier (translations available by Scully and Prescott)
an Anglo-Norman collection (by Hieatt et al)
le Viviendier (translation by Scully)
La Varennes' French Cook (available on microfilm...VERY late, not medieval,
but awfully fun stuff. dated 1651)

have fun! French food is great fun to play with. And contrary to common
opinion, they were eating really well long before that overrated de Medici
chick came around...
