Yes, you are correct. In this case green means unripe or young. However,
unripe or young grapes are without exception green. They only color when they
are ripening. So it is , IMO, difficult or impossible to get a true verjuice
that is red colored. Verjuice is a fermented product made from unripe grapes
or crabapples. Technically, it can be made from any unripe fruit but grapes
and crabapples were the most common source with grapes being the more commonly
used friut.
