According to the recipe, no salt.  But I'm a cook by taste kind of guy,
since I know of no other way to make sure the spicing is right given the
problems with potency and recipe scaling.  I do grinch when I can't taste
the spicing in a supposedly spiced dish.  So, I'll agree, it makes sense
that salt was added to taste.

In the case of Menagier's mustard, he is counciling frugality.  Since he is
a man who obviously enjoyed his food, I would expect him to take whatever
steps he deemed necessary to flavor his mustard as he liked it, including
adding salt and other spices not mentioned.
