Besides, how could I resist that?
Chess Pie
1-1/2 cups sugar
1/2 cup butter, melted
1 tablespoon white vinegar
1 tablespoon plus 1 teaspoon cornmeal
1 teaspoon vanilla
3 eggs, beaten
1 unbaked 8" pie shell
Preheat oven to 350 degrees. Combine sugar, butter,
white vinegar,
cornmeal, and vanilla. Beat on low speed until well
blended and uniform.
Add the beaten eggs,.
Mix thoroughly. Pour into pie shell.
Bake for 50 minutes. Cool.
Yield: 8 servings
