Not a period suggestion but you could always saute  a couple of chicken breast
in butter, followed by sauteing some mushrooms in the pan. Degalze the pan
with a plash of REGULAR sherry, add the almond milk and almonds. Salt to
taste. Ad 1/2 cp heavy cream and simmer until thickened. Lay chicken breasts
on rice saffron rice and pour sauce over top. :-)
