Salsify is aplant grown for it's root which resembles an extremely long thin
carrot. The fleah is white and the skin can be black or white depending on the
variety. When peeled, sliced and stewed it's taste resembles oysters. Simply
drain when it becomes tender, add milk or cream, butter salt and pepper,
reheat..  Voila! Meatless oyster stew. ;-)

It was hilariour to watch it get eaten by the people who couldn't abide
'oysters'. :-)
