SC - Cassia bark vs Cinnamon

Ras, folks - thanks ! (Apologies for delay in response - I ve been offline
for some days)

That seems to be exactly - although I think that UK based supermarkets
actually seem to sell true cinnamon, although at an exorbitant price : ) . I
was taking a short cut and buying from an ethnic shop to get it cheaper &
have ended up with a different product : )

Any ideas on how to use it now? I've got lots to use up and I'm a little
nervous of using it as a direct substitute for cinnamon now!
