SC - Cassia bark vs Cinnamon

I am thouroughly confused here. If, as I am assumiong you purchased a large
amount of cassia, then it would be no problem to use it in regular recipes
calling for cinnamon since most authors use cassia when the write cinnamon.

If you are using it in period recipes, then simply use a little less and build
up to a taste you like.

If you bought lots of true cinnamon then don't worry because it is milder than
cassia.

If you bought the sticks they keep for an almost indefinite time if kept dry
and in a sealed container
