Looks like you'll have something to contribute, in fact a lot, once you
learn the basics of period cooking, Chris. Currently, my pet peeve is baking
meats, rather than roasting them as described in the recipes.

Period cooking is like any other style of cooking- in order to make a period
dish, you've got to understand the basics. Just adding a few spices and
subtracting a few ingredients  won't make it period, any more than adding a
few spices to popcorn makes it cajun (or Thai, or French, or whatever)
popcorn. (I've seen the first two marketted in stores).

Another pet peeve of mine, served frequently here in the Middle Kingdom, is
the Deadly Chicken, supposed to be a roast chicken, but usually a baked
chicken, served on a platter, elegantly congealing in its own grease.......
Bleaghhhhhhhh!!!!!!!!!!

Try a few recipes, your way, as I suggested, and see what you think- I can
read several languages, so I can help you with exact translations, as
necessary- many of our best are not in the English language. And if I can't
help you, odds are someone else can.
