Hello Devra!  I have candied blossoms from rose geranium--if your mint
blooms large enough to handle I don't see why they couldn't be done as
well.  I don't think the spikes would be very tasty but the blooms would
be.
Wish I had my copy of "Edible FLowers" here at the office to recommend...ah
well.  (by Cathy something, maybe?)
