 This is accurate to a point. According to Unmentionable Cuisine, the primary 
purpose of purging the snail is to remove the residue of TOXIC plants. 
Removal of feces is not an issue since the purgative itself whether it be 
milk, cornmeal or whatever) is itself digested and becomes fecal matter. In 
the case of shellfish it is to remove sand and grit that the animal may have 
ingested. 

But the reality of things is that any one who eats either shellfish or snails 
is also eating the fecal matter. Something to remember the next time your 
local food bore refuses to eat liver pate when it is offered but scarfs down 
the clams and mussels. :-)
