SC - salmon recipe?

Stefan -- have you ever had salmon jerky?  I haven't seen it outside
the Pacific Northwest, but when I lived in Portland, I'd get it as a
special treat (expensive!).  Now I'm looking for recipes -- the 'net
abounds in jerky recipes, but I haven't found any for salmon -- anyone
on the list know of any, period or mundane?  Or is what we think of as
jerky not the same type of thing as period dried meats?  

Actually, the vast majority of jerky recipes I've found are of limited
usefulness, since I'm allergic to black pepper and that seems to be a
major component of almost all of them.  Does the pepper serve a
preservation function, or is it just for flavor?  

And as a general question -- what sorts of seasonings would I
substitute for black pepper (or white pepper, or red pepper, etc.) in
recipes, period or not?  I know many on this do not approve of any
substitution in period recipes, but believe me, if anyone in a period
household had their mouth burn like mine does when I eat pepper, THEY'd
have made some other seasoning choice!  So assuming I can only cook
perioid anyway, what other things might I try, in period or mundane
recipes?
