Tamales are very old- they were used as a ceremonial, holiday food- perhaps
why they're associated with Christmas? An Aztec dish- pre-Columbian.

Chiles Relenos- which version? I think stuffed chiles are very period, but
they had no cheese and the versions with cheese would be OOP. Don't know for
sure, though.

We think that enchiladas are period. Tortillas were their bread and eaten
with every meal, but there's no real evidence either way. The mesa harina
flour is prepared much as they would have- soaked in lye and ground fine.

I was under the impression that blue tortillas were made of blue corn, which
by itself has an extra nutrient, but I can be wrong.

Anybody else?
