The species mentioned as edible in Unmentionable Cuisine are:

Helix salomonica
H. prasinata
H. aspera (the familiar escargot)
Achatina fulica (Giant African Snail)

Helix species should ideally be collected when the are hibernating.

Giant African Snails (which are also found in Florida and Hawaii as 
introduced pests) should always be purged with lettuce or other greens for a 
couple of days or better yet given no food to remove the remnants of toxic 
plants.

I suspect that probably other species are equally edible but I have not 
researched this topic further.
