Actually, young groundhog is excellent properly barbecued or grilled. You
just need a young one. The older ones ARE tough, although tasty, and quite
good enough to support a stew as the main meat. Just be sure to remove the
glands on the back legs- they tend to leave an overpoweringly unpleasant
taste.
