What evidence do you have for the implied claim that medieval food would
taste bad to modern people? It isn't consistent with my experience, and the
rest of your post at least suggests that you are only starting on doing
period cooking, so I am not sure how you could have had the experience
needed to justify such a claim.

My lady wife and I, like many others on this list, follow period recipes as
accurately as practical, given the available resources. We find that people
like the result.
