By bacon I meant fresh bacon or side pork more accurately. Not the smoked
preserved sort. Sorry for the misunderstanding.
However, bacon fat from preserved bacon is acceptable in some forms of
biscuits like baking powder biscuits and in frying things like potatoes and
pancakes adding a nice dimension of flavor. :-) I also use preserved bacon
fat in the place of bitter or lard to grease loaves of potato bread after
they come out of the oven for a tasty treat.
