I wonder why the term "butter" and "cheese" are used to describe these 
kind of fruit dishes?  Without the rest of this (wonderful) recipe,
for instance one would imagine this to be maybe a herbed or peppered 
sweet cream butter or something.  Is it because such things are 
spreadable perhaps?
