Riced potatoes are cooked potatoes that have been forced thru the holes in a 
'ricer.' A 'ricer' is a kitchen tool that looks something like a large garlic 
press only round. It has a round canister like basket that is filled with the 
potatoes and then the handle is lifted over the top. A round solid plate is 
attached to the handle forming a plunger type of affair which is then forced 
down on the potato. The potato comes out the holes in the bottom of the 
basket as long spaghetti like strings.

The benefit of the ricer over hand mashing is that the resulting potato mass 
is lighter, fluffier and of a drier texture.
