I disagree. Alochol evaporates rapidly at temperatures far below that of the
boiling point of water. Someone has pointed out on this , IIRC, that there is
alcohol left in the finished product. Those figures show a residual alcohol
level far below anything that anyone could clain as 'alcoholic'. Longer
cooking would in fact virtually drive any amounts of alcohol out that were in
any way significant.

So far as non-alcoholic beer and wine are concerned, the amounts of alcohol is
also insignificant, being 1 percent which is lower than cider and lower than
fruit juices that have been opened for a day or so. It is far lower than the
alcohol produced by yeast action in bread baking. I have yet to see anyone
make a fuss over making bread or serving it at a feast where recovering
alcoholics are present, let alone hear any objections from site owners who
have repressive personal choice policies in place.

Where are you located? I have been unable to locate either red or white grape
juice made from anything other than lambrusco type grapes in my area. These
juices contain flavors which are alien to grapes grown from the vinifera
varieties usually used in wine production. Although their use can  and usually
does produce tasty results, that taste is far from the taste that would have
been meant.

I have had no problem with getting 'permission' to have on-sight cooking wine
or beer at any place I have done a feast. Perhaps the first step to be taken
would be to approach the site owner with the menu and ingredients, offering to
boil off the alcohol before hand if necessary. With this approach, you might
even be able to educate him/her in the culinary arts with the result of having
exceptions made for cooking alcohols.

Given that there are many people who feel some sort of a moral obligation to
blindly follow authority, it is probably not a good idea to advertise  any
exceptions to oppressive rules you might contemplate. Although Thomas
Jefferson, who was a very mroal, honoest, chivalrous person said that a
citizen is not obligated to obey bad laws, you might consider a more 'out of
site, out of mind' approach if you decide to take that route. Site rules
banning alcohol are intended to restrict the use of beverage alcohol
(exceptons include sites rented from Mormans or Muslims) but some people do
not see it that way thereby necessitating more 'conservative' and 'creative'
approaches in handling recipe ingresients.
