As a spelling correction (assuming people cannot read Hebraic characters),
the transliteration is "chai" and not "chi."  The former is also used to
mean "tea" in some peoples, the same ones that tend to use "chi" to mean
"life-force."  If you mean "life" it is pronounced "Hi!" with an aspirated
"H" sound; if you mean "tea" it is "ch-eye."

"L'chaim!" is a common toast, meaning "to life!"

In Hebrew, letters are used for numbers.  So to get "18" it works out to be
the word "chai," which is why many things are done in 18's.  You donate $18,
you bake matzoh for 18 minutes, you give 18 candies in a package, etc.

And yes, you do have to worry about wild yeasts with longer raises, but
dough does of itself because springy and slightly raised if you leave it to
sit.  When I was learning to make fancy-decorated fruitcakes, I was told to
never, EVER roll the marchpane on flour, but ALWAYS on powdered (icing,
confectioner's) sugar, as the flour might have enough raising ability to
make bubbles under the surface.

Time to go home and make matzoh kugel for tomorrow night - at least all our
rain is washing the parsley in my garden!

PS:  The current Chanukah menu has green pancakes as the fritours in one
course.  We've got four in planning: on-table munchies from the three
sources, plus one course each of Sephardic, Middle Eastern, and Ashkenazic.
Approximately.  So far the lactose-intolerants have no worry and the
vegetarians are covered.  Will continue to report as time progresses.
