Salut!
In the making of matzah you have exactly 18 minutes betwixt the time you
add the water to the flour and the time that you pull the hardened,
tasteless sheets out of the oven. A lot of this is so that there is no
time to rise (as the 13 minutes talked about earlier) and the rest is that
the number 18 is seen to be a symbol for life. (Chi, the word for life is
made up of two letters which are also the two used to indicate the number
18). The matzah that is made that way really doesn't rise much, and
though I know that fancy establishments like serving it with pate', it is
still a rather vile substance (too many years of Pesach).
