why did they use so many almonds to flavor foods in medivel England?
They had to be imported from the East. Surely using English walnuts
would have been cheaper.

Walnuts' oil also tendsto be a bit bitter, too, and might mask some of
the other flavors of the dish ro taint them in a way that might not be
appetizing. I've found neither to be the case when using almonds
(except of course, when I forget about them and scorch them onto the
bottom of my skillet....don't try this at home, kids!)
