I haven't cooked ostrich yet although the emu farm from which I got my emu for
the 'roc' recipe does grow these also. Perhaps a future Apician feast will
include this bird.
BTW, urban markets frequently carry ostrich steaks , if you are interested in
this  period bird for a feast and growers are not available as sources for the
meat.
