Perhaps 'vestiges' was the wrong word to use. 

\A modern use of sugar as an example of using it as a spice that would have
been somewhat similar to using sugar as a spice in the middle ages with
regards to quantities usedwould be our use of a spoonful of sugar when cooking
vegetables to give them a garden fresh taste' would have more accurately
described my thought than 'vestiges' but is as you can see much longer.. :-)
