As I wrote earlier, the passage does not read "da mach" but: "darnach
(du den Marcipan grosz wilt machen)", and that means roughly:

'depending on how big you want to make the marzipan'; 'according to the
size of the marzipan'. (See Deutsches Woerterbuch von Jacob und Wilhelm
Grimm, Vol. 2, col. 722, meaning 3; this is kind of OED for German.)
